Tender Coconut Beef with Veggies


(Ready in about 4 hours | Servings 8)


Ingredients :
Two tablespoons coconut oil, room temperature
1 cup shallots, coarsely chopped  
Three cloves garlic smashed
2 pounds grass-fed beef, diced
One teaspoon dried dill weed  
1/2 teaspoon crushed red pepper flakes
Salt and black pepper, to taste  
1 cup of coconut milk
1 cup of warm water
One handful bean sprouts  
One large celery, chopped  
Chopped fresh parsley, for garnish


Directions :


1. In a cast-iron skillet, warm the coconut oil over medium-low heat. Then, sauté the chopped shallots and garlic until the shallots are transparent and the garlic is soft.
2. Add diced beef to the skillet and continue cooking, occasionally stirring, until the meat is turned browned. Season with dill, red pepper, salt, and black pepper. Set it aside, keeping warm.
3. Then, pour coconut milk and warm water into the slow cooker. Lay the beef mixture over it.
4. Top with bean sprouts and celery and allow to cook approximately 4 hours or until the meat and veggies become nicely cooked and tender.

5. Spoon the dish into individual serving bowls and serve sprinkled with fresh parsley. Enjoy!
